Easy Apple Turnover Recipe

Turnovers are one of our all time favorite apple recipes. What Is a Turnover? A turnover is a triangular filled pastry that looks a bit like a hand pie. It's made by filling flaky pastry dough, folding and sealing the edges, and then baking. Turnovers can be sweet or savory. Oftentimes, dessert turnovers are drizzled with a sweet glaze or sprinkled with powdered sugar. These are great for small gatherings as a dessert or a breakfast. We love using Pepperidge Farm pastry sheets. They are light and flaky and complement the sweet filling. Our apple turnover recipe looks and tastes just like the ones at the bakery. I was really impressed with how easy they are to make and what a crowd pleaser it is. The leftover filling is always eaten up by the kids, it's like an apple pie filling or a chunky applesauce.
Apple Turnover Recipe

Ingredients

  • 3 Granny Smith apples - peeled, cored and sliced (or 4 small)
  • 2 Tablespoons Butter
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 (17.5 ounce) package frozen puff pastry sheets, thawed (like Pepperidge Farm) Pepperidge Farm pastry already comes in square sheets, so all you have to do is quarter them with a pizza cutter or a amall knife.
  • 1 egg plus 1 TBS water and a pinch of salt for Egg wash

Glaze
  • 1 cup confectioners' sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

Directions

  • Melt butter in a large skillet over medium heat. Drain water from apples and place them into the hot skillet.
  • Cook and stir for about 2 minutes. Add brown sugar, and cinnamon, and cook stirring for 2 more minutes.
  • Stir together cornstarch and 1 tablespoon water. Pour into the skillet, and mix well. Cook for another minute, or until sauce has thickened.
  • Remove from heat to cool slightly.
  • Preheat the oven to 400 degrees F (200 degrees C)
  • Unfold puff pastry sheets, and repair any cracks by pressing them back together.
  • Spoon apples onto the center of each squares. Fold over from corner to corner into a triangle shape. Press the edges together to seal. Crimp with a fork.
  • Place turnovers on a baking sheet, leaving about 1 inch between them. We like to use parchment paper to line the baking sheet.
  • Prepare your egg wash in a small dish with 1 Tablespoon of water and a pinch of salt. Beat with a fork until combined. Brush on each turnover using a silicone brush.
  • Bake for 20 minutes in the preheated oven, until turnovers are puffed and lightly browned. Watch closely as the pastry shell is very delicate and can burn easily. Cool till warm to touch before adding the glaze or it will simply melt into the pastry and make it soggy.
  • To make the glaze, mix together the confectioners' sugar, milk and vanilla in a small bowl. Adjust the thickness by adding more sugar or milk if necessary. Drizzle glaze over cooled turnovers.

Tips and Suggestions

  • If you don't use cut apples immediately, combine 2 tablespoons lemon juice in 4 cups of water in a large bowl and place sliced apples in the water to keep from browning. Drain water from apples before placing in skillet. We get everything ready before slicing and have not had to do this. They turn color slightly when cooking anyway.
  • I use parchment paper to line the baking sheet for easy removal.
  • You will have extra apples/sauce but it makes a great "fried apples" treat so I haven't cut back the original recipe. I'd also rather have extra than not enough and have to make more.
  • I usually put about 3 slices of apple in each, if the syrup leaks a little from the pastries when closing, it will be fine. I always have extra but the girls enjoy eating it.
  • Add a little more cornstarch if you feel the syrup isn't thick enough.
  • Egg wash is an option

How to Store Apple Turnovers Leftover apple turnovers can be stored in an airtight container at room temperature for up to two days. In an airtight container in the refrigerator, they will last for about five days. Reheat in the oven until the crust is crispy and the filling is heated through.

Tips for our Apple Turnover Recipe

  • You can use apple pie filling if you want, but the crispness of the apple takes your pastry to another level.
  • Using an egg wash is optional but it add some color and shine making them look like bakery made turnovers. Egg Wash recipes sometimes vary the liquid. It can be water, milk or cream. Here are some of the variations I have found:
    1. Whole egg + water: nicely browned, slightly glossy
    2. Whole egg + milk: nicely browned, medium gloss
    3. Yolk + water: less browned, slightly glossy
    4. Yolk + cream: very browned, most glossy
    5. Yolk + milk: most browned, medium gloss
