Fluffy Pancake Recipe

    This recipe makes wonderful fluffy pancakes. This recipe servers about 4-6. (We doubled the original because our girls love these pancakes) We freeze the left overs and heat up in the microwave during a busy week for an easy breakfast before school. It's also perfect for slumber party breakfasts! Since it is such an easy recipe, the girls were often inspired to make them for us on holidays and special occasions. They changed the colors and shapes of them to make it special.

Ingredients

  • 1 1/2 cup milk
  • 1/4 cup white vinegar
  • 2 cup all purpose flour
  • 1/4 cup white sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 egg
  • 1/4 cup melted butter (4 Tablespoons)
  • 1 teaspoon vanilla
  • Cooking Spray

Materials

  • Large Bowl
  • Wooden or Silicone Spoon to mix batter
  • 1/4 cup measure and measuring spoons

Steps

  • Combine milk and vinegar in a small bowl. Set aside for 5 minutes to "sour".
  • In large bowl combine flour, sugar, baking powder, baking soda, and salt.
  • Whisk egg, vanilla and melted butter (not hot) into "soured" milk.
  • Pour the milk mixture into the dry ingredients and whisk until the lumps are gone. Do not over mix. Mixture will be thick and bubbly.
  • Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cups of batter into the skillet, and cook until bubbles appear on the surface.
  • Flip with a spatula, and cook until browned on the other side.
  • Serve with butter and syrup. We also like whipped topping and fresh fruit.

Tips

  • You can use buttermilk in place of the "soured milk" however I found the results seemed fluffier with the soured milk.
  • Do not over mix, there will be a little bit of bubbling from the baking soda, this is what helps make them fluffy. I let the batter sit for 5 minutes before using.
  • I use a 1/4th cup measure to make a good sized pancake and the measuring cup helps keep the sizes of the pancakes pretty even and therefore the timing of flipping and cooking each pancake is easier to monitor.
  • I often use cast iron which I have found that once my skillet heats up I sometimes have to turn down the heat as the metal holds in the heat or the middle doesn't cook all the way. I also use my non stick skillet sometimes.

Toppings and Mix-ins for your Fluffy Pancakes

  • Fresh fruit like blueberries are great in the batter as well as on top
  • Strawberries fresh or make a compote
  • Whipped topping
  • Powdered Sugar
  • Maple Syrup warmed (Costco has a good one)

Birthday Pancakes

    The girls would wake up early to make breakfast for birthdays. They would color some of the pancakes or make them in special shapes. This stack was one of our favorites. They went all out with chocolate chips in the pancakes and sprinkled on top, whipped topping, chocolate syrup drizzled on top and some warm maple syrup.

Valentines Heart Pancakes

    For Valentines Day, the girls like to make themed breakfasts. They used different sized heart cookie cutters to make mini heart pancakes. They made the pancakes first following the recipe. They made different sized pancakes and then used the heart cookie cutters to shape them.

St Patrick's Day

    The girls wanted to make the pancakes green for St. Patrick's Day! They added a few drops of green Wilton gel coloring to the pancake batter to achieve this color. Then they used a Wilton Shamrock Cookie Cutter to make shamrock shapes...don't worry, kids will eat the trimmed off pieces. There were no left overs!

Father's Day Pancakes

    For Father's Day the girls got extra creative. The had a lot of fun making these by putting batter in several bowls and adding a different food coloring to each. Then they put the batter into squeeze bottles so they would have more control to make these detailed pancakes. There were a lot of giggles making these.

Freezing and Reheating Pancakes

Freezing

    Pancakes freeze well and reheat easily. This is great for school mornings when there is no time to cook a breakfast. After they are cooked and cooled, we stack them with a piece of parchment between each pancake and place them in a freezer ziplock. If I have a large number of pancakes I will use a Vacuum Sealer but seal without the vacuum. Putting a piece of parchment is always helpful for when you want to take a certain number for that morning.

Reheating

    Place 1 to 5 frozen pancakes on a microwave-safe plate, and microwave about 20 seconds for 1 pancake, and about 60 seconds for 5 pancakes (time will vary depending on the size of your pancakes and the wattage of your microwave). Sometimes the girls will put it in the toaster oven if they have a large number they are reheating.
