How to Make Gummy Candy
Make these awesome Lego Bricks and Lego Men gummies out of Jello in this recipe showing how to make gummy candy. Perfect for any Lego themed party or celebration. We made some at the end of the First Lego League season. Even high school kids had a kick out of these gummies! Note the serving size pictures at the bottom of the page for reference. This recipe makes one cup of Lego Syrup and is suitable for 2-3 people depending on the size of your pieces. We make one recipe for each flavor/color.
Ingredients
- 1/2 cup cold water
- 1/4 cup Karo Light Corn Syrup
- 2 packets of Knox Gelatine unflavored
- 1 box of Jello 3oz size
Materials
Silicone Lego Molds. I found mine at the Lego store but you can also find similar molds on Amazon by various companies. Just be sure they are food grade silicone. I did not see the Lego molds on Lego's website anymore but I did see some on eBay if you are looking for Lego brand molds.
Medium pot
Whisk and spatula
Measuring Cups or Glass Cups. Measuring cups make it easy to pour directly into the molds or into the plastic dispensing bottles. You could also just use a funnel to pour into the dispensing bottles.
Plastic dispensing bottles (recommended). We found these at Walmart for a $1 each. We have found them useful for other projects and to store sauces as well.
How to Make Gummy Candy
- Put half cup cold water into a small bowl or in a measuring cup.
- Add 1/4 cup Karo syrup and mix well. A small whisk works well. Add to pot, do not turn on the heat yet.
- Add two packages of Knox Gelatin and the package of Jello.
- Mix until fully dissolved before turning on the heat. If you do not, you may get "cloudy" gummies.
- Turn on heat to med low (3 on our stove) and stir constantly for best results to make sure it doesn't burn for about 8 min. Set your timer from the time you turn on the stove. Heat until it is liquified and the mixture looks a little bubbly on the top.
Mix until fully dissolved before turning on the heat.
- Pour into measuring or glass cups and let cool 10 minutes. Measuring cups make it easier to pour into the dispensing bottles but you can always use a funnel.
- The bubbles and/or clumps will rise to the top. Skim the top of the jello mixture with a spatula and discard. This process ensures that you will get nice transparent gummies instead of cloudy ones. If for some reason your jello mixture doesn't allow you to skim after cooling a little, put it back into your pot on medium low heat and whisk for 5 more minutes.
Skim the top to remove any cloudiness.
- Pour the liquid jello mixture into a dispenser bottle for the easiest way to fill the molds. This will minimize overfilling and spilling.
- Place the molds on a small baking pan to make it easier to transport to the refrigerator. Also any spills will be caught on the pan while filling your molds.
- Slowly pour the jello mixture into each of the molds until it completely fills each cavity.
- Let cool for about 6 hours in the refrigerator before removing from the molds. Test for firmness before removing.
Use a dispenser bottle to fill silicone molds.
Multiple Colors and Large Batches
If you are making large batches of Lego Gummies, pour each flavor into a glass. After skimming the top, if it hardens, simply remove from the glass and put into a pan and re-melt at medium low heat. Once melted, pour into a dispenser bottle and fill your molds.
One Recipe
Just to give an idea, one box makes one cup of candy syrup and filled approximately two lego brand molds. Note that other brand molds may have larger bricks and lego men and will take more syrup. One box will made the amount of Jello Gummies shown in the picture below using lego molds. So if it's for a party, you may need to make several servings of each color and I'd start a few days to a week ahead! Just keep refrigerated after making each batch.

Party Planning
- We did 12 boxes of jello, 4 different flavors/colors. We did one color at a time.
- Use the above directions but stir on medium low heat for 10-12 minutes
- Let cool for 10 minutes, and skim the top.
- Fill as many molds as you can and refrigerate.
- Refrigerate the molds. If there is any extra mixture, pour it into a cup and refrigerate. This will make it easier to remove and reheat.
- After the jello gummies hardens in the refrigerator, remove gummies from the mold.
- Extract the extra jello mixture from the cup and re-melt in a pot, pour into a dispenser bottle and refill the molds.
- Repeat with each color.
- To store we separated the layers with parchment paper in an airtight container in the refrigerator.
- When we were ready to bring to the event, we filled portion cups and placed it in a cake container. We made some labels with the lego font.
