I find lunch ideas are the most challenging because I need to pack it for the family. Here are a few lunch ideas that require no cooking or heating up. I put the lunch together the night before, store in the refrigerator, and just pack it in an insulated lunch bag with a cold pack in the morning and you are ready to go.
Fresh Veggies with Salami and Cheese
Fresh veggies with Ranch Dip.
Salami or Pepperoni with Sliced cheese. We like Monterey Jack Cheese and "Cow" Cheese
Egg Salad
Egg Salad on a bed of lettuce. Just prepare egg salad with mayo and your favorite seasonings. We like to use pepper, seasoned salt and paprika.
You won't even need dressing with this lunch. I add a few cherry tomatoes to most salads or sliced cucumbers.
Chicken Salad on Avocado and Veggie Sticks
Half and Avocado on Lettuce filled with Chicken Salad topped with a few bacon crumbles. Added Celery and Carrot sticks with some Ranch Dressing.
Grilled Chicken, Goat Cheese and Lettuce
We use chicken from left over from a whole chicken, or pre made chicken from Trader Joes to top this baby lettuce salad along with goat cheese and toasted pecans.
Fresh Mozzarella and Tomato and a Small Baby Lettuce Salad
Fresh Mozzarella and sliced Roma tomatoes with a basil/olive oil dressing and fresh basil. On the other side, a small baby lettuce salad topped with a sliced boiled egg and bacon or blue cheese crumbles. Packed with blue cheese dressing.
Caesar Salad
We quickly bake or pan fry strips of chicken and season with various seasoning such as Chili Lime, or just Seasoned Salt, Garlic Salt and Pepper. We have tried a few of the frozen strips for convenience but it wasn't liked by the kids. I make the chicken ahead of time, cute romaine lettuce, cucumbers and tomatoes. In the morning I add the chicken and fresh Parmesan.
Greek Salad
Artisan Lettuce torn with pepperoni, salami sliced, tomatoes and sliced olives. We used a homemade Greek Salad Dressing but there are many options on the market.
